Gourmet beef burgers

Wow your guests with this gourmet beef burger.
Ingredients:
  • 600g beef mince
  • 2 green onions, finely chopped
  • 2 tsp chopped fresh rosemary leaves
  • 20.00 ml balsamic vinegar
  • 4 roma tomatoes, halved lengthways
  • 36.40 gm olive oil
  • 82.50 ml caramelised onion
  • 4 crusty Italian rolls, split
  • 80g brie, thinly sliced
  • 165.00 ml beetroot relish
  • Baby rocket, to serve
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and line a baking tray with baking paper.
  • Mix together the mince, onion, garlic, rosemary, and vinegar in a bowl. Season generously with salt and pepper. Divide the mixture into 4 equal portions and shape each into a ball, then flatten into 1cm-thick patties. Place them on a plate lined with baking paper, cover, and refrigerate for 1 hour to enhance the flavors.
  • Arrange the tomatoes cut-side up on the tray, sprinkle with salt and pepper, and roast for 25-30 minutes until they begin to collapse. Let them cool.
  • Heat oil on a barbecue hotplate or large frying pan over medium heat to brown the patties for 4 to 5 minutes each side until just cooked through. Place them on a plate and cover loosely with foil. Allow them to stand for 5 minutes. Spread Caramelised onion onto the roll bases. Place a patty on each roll, then top with brie, tomato, and relish. Serve with baby rocket and roll tops.
