Impress guests with this delectable artichoke bake, perfect as a standalone dish or a delightful side.
Ingredients:
  • 400g marinated artichokes, quartered
  • 2 garlic cloves, sliced
  • 8 eggs
  • 125ml thickened cream
  • Salt & freshly ground pepper
  • 100g semi-dried tomatoes, roughly chopped
  • 100g pitted Kalamata olives, roughly chopped
  • 62.50 ml fresh oregano leaves
Instructions:
  • Preheat your oven to 180°C. Line a 26cm x 18cm baking pan with non-stick baking paper, ensuring it's 3cm deep.
  • Add the artichokes and garlic to the pan. Combine eggs and cream in a large bowl, season with salt and pepper. Pour the mixture over the artichokes and bake until golden and set, about 30-40 minutes.
  • Mix the semi-dried tomatoes, olives, oregano, and olive oil together. Cut the artichoke bake into pieces and plate with the tomato mixture.
