Indulge in cozy cinnamon doughnuts without the guilt with these simple baked treats.
Ingredients:
  • 130g (1 cup) gluten-free plain flour
  • 1/2 tsp xanthan gum
  • 4.00 gm baking powder
  • 1.20 gm salt
  • 100g (1/2 cup) caster sugar
  • 5.00 gm ground cinnamon
  • 1 egg, lightly whisked
  • 4.40 gm gluten-free vanilla extract
  • 125ml (1/2 cup) vegetable oil
  • 80ml (1/3 cup) almond milk
  • 1 tsp white vinegar
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and grease a six-hole doughnut pan.
  • In a large bowl, mix together flour, xanthan gum, baking powder, salt, half of the sugar, and half of the cinnamon. Add egg, vanilla, oil, almond milk, and vinegar. Stir until thoroughly combined. Fill prepared pan cavities with batter, ensuring they are two-thirds full and leaving the donut holes empty.
  • Bake the doughnuts for 10-12 minutes or until a skewer inserted comes out clean. Allow them to cool for 5 minutes before transferring to a wire rack.
  • In a bowl, mix together the remaining sugar and cinnamon. Dip each doughnut in the cinnamon sugar mixture to coat. Serve and enjoy!
