Easy and delicious gluten-free lemon curd tart with goat's cheese cream.
Ingredients:
  • 250g gluten free flour
  • 150g almond meal
  • 1 tsp xanthan gum (available in health food section)
  • 37.50 gm icing sugar
  • 100g unsalted butter, diced
  • 6 egg yolks
  • 250g sugar
  • 100g butter, cubed
  • 262.50 gm fresh lemon juice, strained
  • 150g mild goat's cheese
  • 126.25 gm double cream
  • 12.00 gm icing sugar
  • 250.00 ml frozen blueberries, thawed slightly
Instructions:
  • For the pastry, combine flour, almond meal, xanthan gum, icing sugar, and butter in a food processor. Blend on high until it looks like breadcrumbs. Add eggs and pulse until it forms a dough. If the pastry is sticky, mix in more almond meal and pulse again until smooth.
  • Form the pastry into a flat disc, wrap it in cling wrap, and refrigerate for 20 minutes. Chilling will make the pastry more manageable.
  • Preheat oven to 180C with the fan on.
  • To prepare the lemon curd, bring a saucepan of water to a boil, then reduce heat to a gentle simmer.
  • Combine eggs, egg yolks, and sugar in a mixing bowl and whisk until smooth.
  • Place butter in a metal bowl set over a saucepan of gently simmering water to create a double boiler. Whisk in the egg mixture, then stir in the lemon juice. Keep whisking until the mixture thickens, about 5-10 minutes. Remove from heat, strain the curd, and it is ready to use warm or cool in the fridge. Store in a sealed container for up to one week.
  • Prepare tart tins by greasing them with spray oil. Roll out the pastry and use it to line the tins. Blind bake for 10 minutes, then remove the weights and bake for an additional 15 minutes until the tart shell is crispy and golden. Let it cool before serving.
  • Prepare a delectable goat cheese cream by gently mixing goat cheese, cream, and icing sugar in a bowl using a fork. Adjust sweetness or creaminess to your liking after tasting.
  • Fill tart shells with decadent lemon curd, top generously with fresh blueberries, and serve alongside creamy goats cheese.
