Swap oranges for lemon in curds, cordials, tarts, and marinades for a sweet and juicy twist.
Ingredients:
  • 375ml (1 1/2 cups) milk
  • 3 cardamom pods, bruised
  • 3 whole cloves
  • 4 egg yolks
  • 10.00 gm cornflour (see note)
  • 55g (1/4 cup) caster sugar
  • 1 tsp finely grated orange rind
  • 100ml fresh orange juice
Instructions:
  • In a medium saucepan over medium heat, gently warm the milk, cardamom, and cloves until just beginning to simmer, for about 3-5 minutes.
  • In a medium heatproof bowl, combine egg yolks and cornflour using electric beaters until smooth. Add sugar and beat until pale and thick. Slowly pour in milk mixture while whisking constantly to combine. Remove cardamom and cloves before proceeding.
  • Make sure the pan is clean and dry. Pour in the custard mixture and stir over medium-low heat for 5 minutes until it coats the back of a spoon. Add the orange rind and juice, then stir for another 3 minutes until the custard thickens.
