Elevate mandarins with luscious spiced orange custard.
Ingredients:
  • 55g (1/3 cup) pistachio kernels
  • 80ml (1/3 cup) water
  • 4 mandarins, peeled, segmented
  • Vanilla ice-cream, to serve
  • 500ml (2 cups) milk
  • 1/4 tsp cardamom seeds
  • 3 egg yolks
  • 1 1/2 tsp finely shredded orange rind
  • 42.00 gm fresh orange juice
Instructions:
  • In a small non-stick frying pan over medium heat, toast the pistachios by stirring for 2 minutes until fragrant. Remove from heat and roughly chop them.
  • In a small saucepan over low heat, melt the sugar in water for 2 minutes until dissolved. Bring to a boil, add the mandarin, and cook for 1 minute until tender. Remove from heat, drain, and transfer mandarin to a heatproof bowl to cool for 15 minutes.
  • In a saucepan, gently heat the milk and cardamom until simmering. Remove from heat and strain into a heatproof jug.
  • In a large heatproof bowl, use an electric beater to blend the egg yolks and sugar until pale and creamy. Gradually stir in the hot milk.
  • Transfer the milk mixture to a fresh saucepan and gently stir over medium-low heat for 10 minutes, until it thickens and coats the back of the spoon. Take off the heat and mix in the orange rind and juice. Allow it to cool for 15 minutes.
  • In each glass, layer mandarin slices, ice-cream, and a drizzle of custard. Repeat the layers with the rest of the ingredients. Finish with a sprinkle of pistachios before serving.
