Delicious gluten-free chocolate chip-pumpkin muffins with homemade flour blend.
Ingredients:
  • 1.75 cups rice flour
  • 1 cup soy flour
  • 0.5 cup white sugar
  • 1.5 teaspoons salt
  • 1 (15 ounce) can pumpkin puree
  • 0.5 cup oil
  • 2 eggs, lightly beaten
  • 0.5 cup infant rice cereal
  • 1.5 tablespoons baking powder
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C), then prepare a 12-cup muffin tin by greasing it or lining with paper liners.
  • Combine rice flour, soy flour, sugar, and salt in a bowl, whisk to blend, then add pumpkin, oil, and eggs, stirring until well combined.
  • In a bowl, combine rice cereal and baking powder, then mix them into the pumpkin mixture until well combined. Gently fold in the chocolate chips and spoon the batter into the muffin cups.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
