Gluten-free muffins are perfect for school snacks!
Ingredients:
  • 500g packet mixed berry flavoured gluten-free muffin mix
  • 250.00 ml vanilla gluten-free yoghurt
  • 2 eggs, lightly beaten
  • 60g butter, melted, cooled
  • 800g can pie apples, chopped
  • 2.50 gm ground cinnamon
Instructions:
  • Preheat your oven to 200°C (180°C fan-forced). Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, leaving a 3cm overhang on all sides.
  • Start by transferring the muffin mix into a spacious bowl and creating a well in the center. In a separate container, mix together the yogurt, eggs, and butter, then pour this mixture into the well along with half of the apple. Gently stir everything together until just combined. Spread the mixture evenly into the pan and layer the remaining apple on top. Finish by sprinkling with a little bit of cinnamon.
  • Bake for 45 minutes until golden and set. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Cut into 24 squares and store in an airtight container.
