Gluten-free apple Christmas cake

Gluten-free apple spice cake- a festive treat with sweet apples and warm spices.
Ingredients:
  • 225 g butter room temperature, plus extra for greasing
  • 450 g Bramley apples
  • 200 g medjool dates
  • 100 g raisins
  • 4 large free-range eggs
  • 150 g gluten-free white bread flour plus a teaspoon extra
  • 100 g ground almonds
  • 1½ tablespoons gluten-free baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ nutmeg
  • 2 tablespoons pine nuts
  • 2 tablespoons demerara sugar
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4. Grease and line a 23cm round cake tin. In a food processor, blend butter, apples, dates, and half the raisins until smooth. Transfer to a bowl and mix in one third of beaten eggs. In another bowl, combine flour, almonds, baking powder, cinnamon, ginger, and grated nutmeg. Alternate adding and mixing egg mixture and flour mixture into the apple mixture. Fold in remaining raisins. Pour into the cake tin. Combine pine nuts, demerara sugar, and extra gluten-free flour, then sprinkle over the cake. Bake for 50-60 minutes. Cool the cake in the tin for 10 minutes, then transfer to a wire rack to cool completely.
