Gluten-free apple, almond & cardamom cupcakes

Easy-to-make gluten-free cakes bursting with flavor, enhanced by fragrant cardamom.
Ingredients:
  • 200 g gluten-free flour
  • 100 g ground almonds
  • 1 pinch of salt
  • 2 teaspoons gluten-free baking powder
  • ½ teaspoon ground cardamom
  • 5 large free-range eggs
  • 2 tablespoons vegetable oil
  • 200 g sugar
  • 2 Gala apples
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4 and line two 12-hole muffin trays with cupcake cases. In a bowl, mix the dry ingredients. Core and chop the apples. In a separate bowl, whisk together eggs, vegetable oil, and sugar until light and fluffy. Gradually add the dry ingredients, then fold in the chopped apple. Spoon the batter into the cupcake cases and bake for 20 to 30 minutes until firm and lightly golden-brown.
