Indulge in delectable banana-chocolate muffins, a delightful treat for any occasion.
Ingredients:
  • 1/2 cup white rice flour
  • 1/2 cup tapioca flour
  • 1/2 cup potato starch flour
  • 1/4 cup sweet white sorghum flour
  • 1/4 cup garbanzo and fava flour
  • 1/2 teaspoon xanthan gum
  • 1 teaspoon gluten-free baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sunflower or canola oil or melted ghee
  • 1/4 cup almond milk, soymilk or regular milk
  • 1 cup mashed ripe bananas (2 medium)
  • 2/3 cup packed brown sugar
  • 2 teaspoons pure vanilla
  • 1/2 cup miniature semisweet chocolate chips
Instructions:
  • Preheat your oven to 350°F and generously spray 16 regular-size muffin cups with cooking spray (without flour).
  • Combine flours, xanthan gum, baking powder, baking soda, and salt in a small bowl. In a medium bowl, use an electric mixer to blend eggs, oil, milk, bananas, brown sugar, and vanilla until smooth. Slowly mix in the flour mixture until fully combined. Fold in chocolate chips. Fill muffin cups three-fourths full with batter evenly.
  • Bake for 18 to 20 minutes until a toothpick inserted in the center comes out clean. Let it cool for 5 minutes, then remove from the pan onto a cooling rack. Serve warm.
