Versatile gluten-free buckwheat crepes for sweet or savory fillings, ideal for a simple gluten-free dessert.
Ingredients:
  • 1 cup milk
  • 2 eggs
  • 1 tablespoon vegetable oil
  • 0.5 cup gluten-free all-purpose baking flour
  • 3 tablespoons buckwheat flour
  • 1 teaspoon butter, or as needed
Instructions:
  • Combine milk, eggs, and vegetable oil in a bowl, whisking until smooth. Gradually sift in all-purpose flour and buckwheat flour, stirring constantly until batter reaches a runny consistency.
  • In an 8-inch skillet or crepe pan over medium heat, melt butter. Pour 1/4 cup batter into the skillet and swirl to coat the bottom evenly. Cook until the top is set and the bottom is lightly browned, about 1-2 minutes. Gently loosen the edges with a spatula, flip the crepe, and cook for another minute until lightly browned. Transfer to a cooling rack. Repeat with remaining batter, giving it a quick whisk before each use.
