Gluten-free buckwheat pasta with hearty bolognaise sauce - a satisfying meal for everyone!
Ingredients:
  • 20ml (1 tbsp) olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 300g pork mince
  • 20ml (1 tbsp) tamari sauce
  • 1.25 gm ground cinnamon
  • 1/2 tsp dried chilli flakes
  • 10.00 gm mild paprika
  • 150ml dry white wine or sherry
  • 425g can crushed tomatoes
  • 170ml can tomato juice
  • 125.00 ml chopped coriander leaves, plus a few whole leaves, to serve
  • 300g buckwheat noodles
  • 1/2 telegraph cucumber, sliced
Instructions:
  • Heat oil in a saucepan over medium heat. Sauté onion until soft. Add garlic and pork, cook until browned. Stir in tamari and spices, cook for 1 minute. Pour in wine, simmer for 2-3 minutes. Add tomatoes, tomato juice, and seasoning.
  • Simmer on low heat for 8-10 minutes until the sauce is reduced and thickened. Gently fold in the fragrant coriander.
  • Prepare the noodles as instructed on the package. Divide them into bowls. Add the bolognaise sauce on top and sprinkle with cucumber slices and fresh coriander leaves.
