Transforming classic pasta salad with buckwheat noodles, vibrant veggies, seeds, and lean chicken, tossed in a zesty, light dressing for a healthy twist.
Ingredients:
  • 250g buckwheat pasta or chickpea pasta
  • 150g sugar snap peas, trimmed
  • 150g (1 cup) frozen peas, thawed
  • 50g spinach leaves
  • 300g shredded barbecue chicken (see notes)
  • 125.00 ml fresh mint leaves
  • 1 lemon, zested, juiced
  • 80 ml (1/3 cup) buttermilk
  • 19.80 gm chipotle mayonnaise
  • 40.00 ml seed mix (pine nut, pepita, sunflower seed), toasted
Instructions:
  • Boil pasta in a large saucepan until al dente as per package instructions. Toss in snap peas and thawed peas during the last minute of cooking. Drain and rinse under cold water.
  • Combine pasta and peas in a large bowl. Add spinach, chicken, mint, and lemon zest. Mix thoroughly.
  • Whisk together 1-2 tablespoons of zesty lemon juice with creamy buttermilk and rich mayonnaise. Season generously. Divide the flavorful salad among serving bowls. Top with the tangy dressing and sprinkle with toasted seeds before serving.
