Elevate sweet potatoes and onions with a flavorful blend of jerk seasoning and brown sugar for a delicious side dish.
Ingredients:
  • 1 teaspoon vegetable oil
  • 1/4 large sweet onion (Bermuda, Maui, Spanish or Vidalia), sliced
  • 3 medium sweet potatoes, peeled and sliced (3 1/2 cups)
  • 2 tablespoons packed brown sugar
  • 1/2 teaspoon jerk seasoning (dry)
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a 10-inch nonstick skillet, heat oil over medium heat. Sauté onion and sweet potatoes for about 5 minutes until light brown, stirring occasionally. Reduce heat to low, cover, and continue cooking for 10 to 12 minutes, stirring occasionally, until potatoes are tender.
  • Combine brown sugar and jerk seasoning into the mixture, letting it cook without a lid for about 3 minutes until a luscious glaze forms. Finish by scattering some freshly chopped parsley on top.
