Buckwheat pasta with caramelised onion and peas

Caramelized onions and sage elevate this gluten-free pasta dish with a delightful sweetness.
Ingredients:
  • 2 large red onions, thinly sliced
  • 2 garlic cloves, finely chopped
  • 40.00 ml chopped sage leaves
  • 20.00 ml balsamic vinegar
  • 350g gluten-free buckwheat spaghetti (see note)
  • 240g pea
  • 40.00 ml grated parmesan
Instructions:
  • In a frypan over medium heat, warm the oil before adding onion, garlic, and sage. Cook and stir occasionally for 20 minutes until the onion is golden brown. Then, pour in balsamic vinegar and cook for an additional 5 minutes until caramelised.
  • Simultaneously, cook the pasta and peas together in a pot of boiling salted water following the package directions until the pasta is al dente and the peas are tender, about 3 minutes before the pasta is done.
  • After draining the pasta and peas, place them back in the pan. Mix in the caramelized onion or onion marmalade if preferred. Finish by sprinkling with Parmesan cheese before serving.
