Satisfying buckwheat soba noodle salad with fresh mango, red bell pepper, aromatic herbs, crunchy peanuts, zesty lime, and sesame dressing.
Ingredients:
  • 6 Tbsp seasoned rice vinegar
  • 1 Tbsp sugar
  • 1/4 teaspoon salt
  • 1 large garlic clove, minced
  • 1 1/2 Tbsp fresh lime juice
  • Zest of one lime
  • 1 1/2 teaspoons dark sesame oil
  • 6 ounces soba noodles
  • 1/2 large red bell pepper, chopped
  • 1 small ripe mango, peeled and chopped into cubes
  • 1/2 cup thinly sliced fresh basil
  • 1/2 cup thinly sliced fresh mint
  • 1/2 cup chopped toasted salted peanuts
Instructions:
  • Prepare the dressing by combining rice vinegar, sugar, and salt in a saucepan over medium heat until sugar and salt dissolve, about 1-2 minutes. Mix in garlic and let it cool. Stir in lime juice, lime zest, and sesame oil until well combined.
  • Prepare noodles: Cook until al dente following package instructions in salted water. Drain, rinse under cool water, and toss with dressing in a large bowl.
  • Combine the mango, bell pepper, basil, and mint for a burst of fresh flavors. Toss gently and elegantly plate the colorful mixture. Finish by sprinkling chopped peanuts over the top before serving.
