Spicy soba noodle salad with peanuts - ideal for picnics and BBQs.
Ingredients:
  • 15 ounces dried soba noodles
  • 0.33333334326744 cup rice vinegar
  • 0.33333334326744 cup soy sauce
  • 1 lime, zested and juiced
  • 1.5 teaspoons dark sesame oil
  • 2 tablespoons brown sugar
  • 2 teaspoons red pepper flakes, or to taste
  • 1 cup finely grated carrot
  • 0.5 cup chopped fresh cilantro
  • 0.25 cup coarsely chopped salted peanuts
Instructions:
  • Boil a large pot of water until it bubbles vigorously. Cook soba noodles in the boiling water until just tender, approximately 5 minutes. Drain the noodles in a colander, give them a refreshing rinse with cold water, and set them aside.
  • Combine rice vinegar, soy sauce, lime juice, and sesame oil in a large bowl. Add brown sugar, lime zest, garlic, and red pepper flakes; mix well until sugar dissolves. Gently fold in carrot, cilantro, and peanuts until fully combined.
  • Cut the noodles into 3-inch lengths, then stir them into the carrot mixture. Cover the bowl and refrigerate for a minimum of 1 hour.
  • Before serving, gently mix the salad once more. If it seems dry, drizzle with soy sauce and rice vinegar. Enjoy chilled.
