Quick and easy no-cook Thai-inspired meal ready in 20 minutes.
Ingredients:
  • 200g Thai-style rice noodles
  • 350g pkt Cooked & Peeled Frozen Prawns, thawed
  • 1 carrot, peeled into ribbons
  • 1 Lebanese cucumber, peeled into ribbons
  • 2 spring onions, thinly sliced
  • 82.50 ml mint leaves
  • 1 long red chilli, thinly sliced (optional)
  • 24.40 gm fish sauce
  • 21.00 gm lime juice
  • 1 tsp sesame oil
  • 4.00 gm brown sugar
  • 82.50 ml Sea Salt & Cracked Pepper Salad Toppers
  • Lime wedges, to serve
Instructions:
  • Place noodles in a heatproof bowl and pour boiling water over them. Allow to sit for 5 minutes to soften, then rinse with cold water and drain well.
  • Mix noodles, prawns, carrot, cucumber, half of the spring onion, mint, and optional chilli in a spacious bowl.
  • In a screw-top jar, blend fish sauce, lime juice, oil, sugar, and the rest of the spring onion. Shake vigorously to mix well.
  • Drizzle the flavorful dressing over the vibrant salad, sprinkle with crunchy salad toppers, and serve with zesty lime wedges.
