Avocado and prawn cocktail

Create a delicious retro prawn cocktail with fresh prawns, creamy avocado, and crisp lettuce.
Ingredients:
  • 1 avocado, halved, stone removed, peeled, coarsely chopped
  • 1 Lebanese cucumber, finely chopped
  • 1/2 small red onion, finely chopped
  • 125g (1/2 cup) mayonnaise
  • 20.80 gm tomato sauce
  • 12.20 gm worcestershire sauce
  • 21.00 gm fresh lemon juice
  • 6 drops red Tabasco pepper sauce
  • 8 iceberg lettuce leaves
  • 24 (about 2kg) cooked large king prawns, peeled leaving tails intact
  • Lemon wedges, to serve
Instructions:
  • Mix the avocado, cucumber, and onion in a medium bowl.
  • Combine the mayonnaise, tomato sauce, Worcestershire sauce, lemon juice, and Tabasco in a bowl and whisk until smooth.
  • Prepare the serving glasses by lining each with a fresh lettuce leaf. Finely shred the rest of the lettuce leaves and distribute evenly among the glasses. Add the delicious avocado mixture and prawns on top. Finish off with a drizzle of the scrumptious mayonnaise mixture. Serve alongside lemon wedges for a burst of citrus flavor.
