Cucumber and prawn salad

Asian prawn salad, ideal for outdoor dining.
Ingredients:
  • 1 continental cucumber
  • 500g cooked prawns, peeled
  • 2 shallots, finely sliced diagonally
  • 82.50 ml fresh mint leaves
  • 1 small red chilli, halved, deseeded and finely sliced
  • 42.00 gm fresh lime juice
  • 18.20 gm peanut oil
  • 6.10 gm fish sauce
  • 4.00 gm brown sugar
  • 30g peanuts, chopped
Instructions:
  • Peel the cucumber and halve it lengthwise. Scoop out the seeds using a teaspoon and discard them. Slice the cucumber thinly.
  • Mix together the prawns, cucumber, shallots, mint, and chili.
  • Mix the lime juice, oil, fish sauce, and sugar in a small bowl. Drizzle the mixture over the salad, toss well, sprinkle with peanuts, and serve right away.
