Quick and easy Thai-inspired no-cook meal ready in less than 20 minutes!
Ingredients:
  • 200g Thai-style rice noodles
  • 350g pkt Cooked & Peeled Frozen Prawns, thawed
  • 1 carrot, peeled into ribbons
  • 1 Lebanese cucumber, peeled into ribbons
  • 2 spring onions, thinly sliced
  • 82.50 ml mint leaves
  • 1 long red chilli, thinly sliced (optional)
  • 24.40 gm fish sauce
  • 21.00 gm lime juice
  • 1 tsp sesame oil
  • 4.00 gm brown sugar
  • 82.50 ml Sea Salt & Cracked Pepper Salad Toppers
  • Lime wedges, to serve
Instructions:
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them soften for 5 minutes, then rinse them under cold water and drain thoroughly.
  • Mix together the noodles, prawns, carrot, cucumber, half of the spring onion, mint, and chili (if desired) in a spacious bowl.
  • In a screw-top jar, mix the fish sauce, lime juice, oil, sugar, and remaining spring onion. Shake vigorously until well combined.
  • Pour the dressing over the salad mixture, then sprinkle with salad toppers. Serve alongside lime wedges.
