Impress with a delicious soba noodle salad topped with crispy fried shallots.
Ingredients:
  • 270g dried soba noodles
  • 425g can tuna in olive oil
  • 2 medium tomatoes, chopped
  • 1 medium avocado, chopped
  • 250.00 ml fresh mint leaves
  • 86.63 gm lime juice
  • 20.00 ml rice wine vinegar
  • 20.00 gm caster sugar
  • 62.50 ml fried Asian shallots (see note)
Instructions:
  • Boil noodles in a large saucepan following packet instructions until tender. Drain and rinse with cold water.
  • Drain the tuna, saving 2 tablespoons of oil. Put the tuna in a large bowl and use a fork to flake it. Mix in the noodles, tomato, avocado, and mint.
  • In a jug, combine reserved oil, lime juice, vinegar, and sugar. Season with salt and pepper and whisk with a fork until sugar dissolves. Pour over noodle mixture, toss to combine, and serve with fried shallots on top.
