Soba Noodle Salad with Peanut Sauce

Soba noodle and green bean salad with zesty peanut dressing.
Ingredients:
  • 1 tablespoon tamari or soy sauce
  • 1 package (8 oz) uncooked udon or soba (buckwheat) noodles
  • 2 cups Cascadian Farm® frozen organic cut green beans (from 16-oz bag), thawed
  • 1 tablespoon peanut butter
  • 1 tablespoon rice vinegar or cider vinegar
  • 2 teaspoons honey
  • 2 teaspoons hot chili paste with garlic
  • 1/3 cup water
Instructions:
  • Cook noodles according to package instructions, then toss in green beans for the final 4 minutes of cooking. Refresh with cold water and drain well.
  • Combine the remaining ingredients in a microwave-safe bowl. Microwave on High for 15 to 20 seconds until softened. Use a wire whisk to beat the sauce until smooth.
  • Combine the green beans, cooked noodles, and sauce in a large bowl, ensuring everything is evenly coated. Refrigerate for a minimum of 2 hours before serving for the best flavor.
