Embrace the Japanese tradition of loud noodle slurping for maximum enjoyment.
Ingredients:
  • 12.00 gm tahini
  • 40.00 ml rice vinegar
  • 21.00 gm light soy sauce
  • 36.40 gm peanut oil
  • 1 tsp sesame oil
  • 5.00 gm caster sugar
  • 270g pkt soba noodles
  • 200g snow peas, trimmed, thinly sliced lengthways
  • 1 bunch asparagus, trimmed, cut into ribbons
  • 200g hot-smoked salmon, flaked
  • 12.00 gm toasted black sesame seeds
  • Pickled ginger, to serve
Instructions:
  • Mix together the tahini, vinegar, soy sauce, peanut and sesame oil, and sugar in a small bowl. Adjust seasoning to taste with salt and ground white pepper.
  • Prepare the noodles as per package instructions in a large saucepan of boiling water until tender. Then, refresh in cold running water and drain thoroughly.
  • Place the snow peas in a heatproof bowl and cover with hot water. Let sit for 1 minute, then drain thoroughly.
  • Combine noodles, snowpeas, asparagus, and salmon in a bowl with half of the dressing, and gently mix.
  • Portion the salad into individual serving bowls. Drizzle with the remaining dressing, sprinkle with sesame seeds, and serve promptly with optional pickled ginger on the side.
