Try quick teriyaki salmon on tasty soba noodle salad for an easy 20-minute meal.
Ingredients:
  • 270g pkt soba noodles
  • 18.20 gm peanut oil
  • 4 x 200g salmon fillets, skin on
  • 125.00 ml teriyaki sauce
  • 2 carrots, cut into ribbons
  • 2 Lebanese cucumbers, cut into ribbons
  • 2 spring onions, thinly sliced diagonally
  • 1 red capsicum, cut into strips
  • 6.00 gm sesame seeds, toasted
  • 20.00 gm mirin seasoning
  • 21.00 gm lime juice
  • 21.00 gm soy sauce
  • 20.00 ml sesame oil
Instructions:
  • Boil noodles in a pot of bubbling water for 5 minutes or until tender. Then, refresh them in cold water and drain well.
  • Heat oil in a large frying pan until sizzling. Sear salmon skin-side down until crispy, then flip and cook for 1 more minute. Drizzle teriyaki sauce over salmon and simmer until slightly thickened. Let it rest for a minute before serving.
  • In a small bowl, combine mirin seasoning, lime juice, soy sauce, and oil. Whisk until well blended to create the flavorful mirin dressing.
  • Combine noodles, carrot, cucumber, onion, capsicum, and dressing in a large bowl. Toss well to mix. Serve salmon over noodles and sprinkle with sesame seeds.
