Whip up a flavorful teriyaki grilled salmon with soba noodle salad for a nutritious Asian-inspired dish.
Ingredients:
  • 60ml soy sauce
  • 60ml sake
  • 40.00 ml mirin
  • 40.00 gm caster sugar
  • 1 tsp ginger, finely grated
  • 4 (about 120g each) skinless salmon fillets
  • 180g soba noodles
  • 200g snow peas, thinly sliced lengthways
  • 1 carrot, peeled, cut into matchsticks
  • 1 bunch asparagus, thinly sliced lengthways into ribbons
  • 125.00 ml coriander leaves
  • 1 tsp sesame oil
  • Sesame seeds, toasted, to serve
Instructions:
  • In a small saucepan over medium heat, merge the soy sauce, sake, mirin, sugar, and ginger. Simmer gently, stirring occasionally, for 5 minutes until the sauce slightly thickens. Let cool for 15 minutes. Set aside 2 tablespoons of the sauce for later use.
  • Place the salmon in a glass or ceramic dish and drizzle the remaining teriyaki sauce over it. Refrigerate for 30 minutes to enhance the flavors.
  • Cook the noodles in boiling water for 2-3 minutes until tender, then add the snow peas and cook for 30 seconds until bright green and tender-crisp. Refresh with cold water and drain well.
  • Preheat the grill to medium-high. Line a tray with foil, then place the marinated salmon on it. Grill for 3 minutes on each side for medium doneness, or until cooked to your preference. Let it rest for 5 minutes before serving.
  • Combine the noodles with the carrot, asparagus, and coriander in a large bowl. Drizzle with reserved teriyaki sauce and sesame oil, toss well. Serve on plates and top with salmon. Sprinkle with sesame seeds.
