Grill salmon flawlessly with no sticking using one of four delicious marinades.
Ingredients:
  • 1 1/2 to 3 pounds salmon fillets, skin-on (about 1/3 to 1/2 pound per person)
  • Extra virgin olive oil
  • Basic marinade:
  • 3/4 cup soy sauce (use gluten-free soy sauce if cooking gluten-free)
  • 4 garlic cloves, minced
  • Basic teriyaki marinade:
  • 1 cup soy sauce (use gluten-free soy sauce if cooking gluten-free)
  • 1-inch knob fresh ginger root, grated
  • 4 to 5 cloves garlic, crushed
  • 2 to 4 tablespoons brown sugar, light or dark
  • Teriyaki marinade with mirin:
  • 1/2 cup soy sauce (use gluten-free soy sauce if cooking gluten-free)
  • 1/4 cup mirin (sweet Japanese rice wine) or seasoned rice vinegar
  • 1/4 cup brown sugar, light or dark
  • 2 tablespoons minced garlic
  • 2 tablespoons minced fresh ginger
  • 1/4 cup minced green onions
  • 2 tablespoons vegetable oil
  • Pinch red chili pepper flakes
  • Yakitori marinade with sake:
  • 1/2 cup sake
  • 1/2 cup mirin
  • 2 tablespoons finely grated fresh ginger
  • 2 cloves garlic, minced
  • Dash red chili pepper flakes
  • 1/4 cup sugar
Instructions:
  • Prepare the marinade by mixing the ingredients in a bowl, ensuring the sugar is fully dissolved for maximum flavor.
  • Prepare the salmon: Cut fillets into 1 1/2 to 2-inch wide pieces. Combine marinade ingredients in a large casserole dish, coat salmon fillets, and place flesh-side down in the marinade. Marinate for 20 minutes at room temperature or 1 to 2 hours in the refrigerator. Remove fillets from marinade before grilling, and oil both sides generously.
  • Preheat the grill: Preheat one side for high direct heat (for charcoal grill, set one side with fewer coals for indirect heat). Once hot (able to hold your hand one inch above grates for 1 second), oil the grates by brushing with a paper towel dipped in oil using tongs.
  • Lay salmon fillets flesh side down on the hot grill and close the lid. Grill for 1 to 3 minutes without moving them to get perfect grill marks and keep the fish intact.
  • Flip the fillets, ensuring the skin side is facing down on the grill. Continue cooking for 2-5 minutes until the salmon is just barely opaque. Remove from grill and serve hot. Enjoy the delicious dish and don't forget to rate and comment!
