Ingredients:
  • For the brine:
  • 4 cupwater
  • 1/4 cup kosher salt (or 3 tablespoons sea salt)
  • For the chicken:
  • 1 1/2 to 2 pounds boneless skinless chicken breasts
  • 3 tablespoons extra virgin olive oil (plus more for the grill)
  • 1 1/2 teaspoons paprika
Instructions:
  • Prepare the brine by whisking salt into water until fully dissolved. Add the chicken breasts to the brine and refrigerate for 30 minutes to chill.
  • Get your grill ready: Create a two-zone fire by setting up one side for high direct heat and the other side for moderate indirect heat. Alternatively, opt for a grill pan over medium-high heat.
  • Drizzle olive oil over the chicken breasts and generously sprinkle with paprika after patting dry from the brine.
  • Preheat the grill and brush olive oil on the grates. Grill the chicken breasts on high heat until they develop grill marks. Flip the chicken over and move to a cooler section of the grill. Cover and cook until the internal temperature reaches 155°F. Enjoy the perfectly grilled chicken!
