Vibrant soba noodle salad with zesty sweet dressing, chicken, and assorted veggies - a fresh and satisfying meal.
Ingredients:
  • 2 tablespoons rice vinegar
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 2 teaspoons minced fresh ginger root
  • 4 ounces buckwheat soba noodles
  • 2 teaspoons vegetable oil
  • 1 boneless skinless chicken breast, cut into thin bite-size strips
  • 1 teaspoon chopped garlic
  • salt and ground black pepper to taste
  • 1 rib celery, sliced
  • 1 carrot, sliced
  • 0.5 red bell pepper, chopped
  • 0.25 cup chopped fresh cilantro
  • 2 tablespoons chopped green onion
  • 1 tablespoon sesame seeds
Instructions:
  • Combine rice vinegar, 1 tablespoon of vegetable oil, sesame oil, brown sugar, soy sauce, and ginger in a large bowl, whisk until dressing is well combined.
  • 1. Bring a large pot of water to a vigorous boil. 2. Add soba noodles and stir well, allowing the water to return to a boil. 3. Boil the noodles until tender, approximately 4 to 5 minutes. 4. Drain the noodles in a colander under cold running water until they cool, for about 1 minute.
  • In a skillet over medium heat, warm 2 teaspoons of vegetable oil. Sear chicken breast pieces until fully cooked and the juices run clear, for about 2 to 4 minutes. Then, add garlic, salt, and pepper, and sauté until fragrant, approximately 1 minute.
  • Combine soba noodles, chicken, celery, carrot, red pepper, cilantro, green onion, and sesame seeds in a large bowl. Drizzle with dressing and toss to coat evenly.
