Gluten-free pancakes with cream cheese bites and strawberry sauce.
Ingredients:
  • 1 package (3 oz) cream cheese
  • 1 cup Bisquick™ Gluten Free mix
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 tablespoon lemon juice
  • 1 cup sliced fresh strawberries
  • 1/2 cup strawberry syrup for pancakes
Instructions:
  • Slice the cream cheese lengthwise into four pieces. Place the slices on an ungreased plate, cover them, and place in the freezer for 8 hours or overnight.
  • Dice cream cheese into 1/4-inch cubes and keep to the side. Combine all pancake ingredients in a large bowl until fully mixed. Fold in the diced cream cheese.
  • Preheat griddle to 375°F or a 12-inch skillet over medium-high heat. Test if the griddle is ready by sprinkling a few drops of water - when bubbles jump around, it's the perfect temperature. Grease the griddle with vegetable oil or spray with cooking spray before heating.
  • Pour a generous 1/4 cup of batter for each pancake onto the hot griddle. Cook until the edges are dry, then flip and cook until both sides are golden brown.
  • Combine succulent strawberries and luscious syrup in a small bowl, then generously top your pancakes for a delightful breakfast experience.
