Lemon Goat Cheese Cheesecake Bites (Gluten Free Optional)

Irresistible gluten-free cheesecake bites with a unique twist.
Ingredients:
  • 1 cup all-purpose flour
  • 0.25 cup powdered sugar
  • 0.25 cup granulated sugar
  • 8 tablespoons unsalted butter, at room temperature
  • 1 (8 ounce) package cream cheese, at room temperature
  • 1 (4 ounce) log goat cheese, at room temperature
  • 0.5 cup powdered sugar
  • 0.5 cup Mott's® Natural Applesauce
  • 1 tablespoon fresh lemon juice
Instructions:
  • Preheat the oven to 350°F and prepare a muffin tin with 12 standard-size silicone cups or paper liners.
  • Using a stand mixer with the paddle attachment, combine the flour(s), sugars, butter, vanilla, and lemon on medium-low speed until a dough forms.
  • Roll the dough into 1-inch balls, then gently press them into the muffin cups to create a flat disk using the back of a spoon.
  • Bake for 10-12 minutes until the crust is matte on top - it will be puffy and soft. Cool while preparing the filling.
  • Use an electric hand mixer or stand mixer with the paddle attachment to blend together cream cheese, goat cheese, sugar, flour, egg, applesauce, lemon zest, and juice on medium-low speed until smooth.
  • Divide the filling evenly among the cups, filling them to the top.
  • Bake for around 30 minutes, until the filling is firm and golden. Cool on a wire rack before serving.
