Carrot and goat cheese pizza on cauliflower crust with lemon arugula salad. Sweet, tart, and cheesy perfection.
Ingredients:
  • 1 CAULIPOWER® Cauliflower Pizza Crust
  • 4 teaspoons olive oil, divided
  • 1 large carrot, thinly sliced on the diagonal
  • 0.125 teaspoon ground black pepper
  • 0.25 medium red onion, thinly sliced
  • 4 ounces goat cheese, at room temperature
  • 1 egg yolk
  • 1 clove garlic, minced
  • 1 lemon, zested and juiced
  • 2 teaspoons honey
  • 1 cup baby arugula
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and gracefully line 2 baking sheets with foil.
  • Coat carrot slices in 1 teaspoon of olive oil and season with salt and pepper. Repeat the same process with red onion slices. Place carrots and onions on separate baking sheets.
  • Roast in the oven, preheated to perfection, for 10 minutes.
  • As the carrot and onion roast, blend goat cheese, egg yolk, garlic, and lemon zest in a bowl until creamy. Season with salt and pepper, then set aside.
  • Take out the roasted vegetables from the oven. Drizzle carrots with honey and keep them to the side. Preheat the oven to 425°F (220°C).
  • Evenly distribute the creamy goat cheese mixture on the crust, ensuring to leave a 1/4-inch border. Layer the vibrant carrots on top of the pizza and generously sprinkle with red onion for extra flavor.
  • Bake until cheese is gooey and golden brown, about 13 to 15 minutes.
  • As the pizza bakes, combine arugula with 2 teaspoons olive oil, lemon juice, salt, and pepper. Slice the pizza, then add the dressed arugula on top or serve it alongside.
