Balsamic roasted carrots and baby onions

Honey-glazed baby carrots and caramelized onions for a tasty side dish.
Ingredients:
  • 2 bunches baby (Dutch) carrots, scrubbed, ends trimmed to 3cm
  • 16 small (about 60g each) white onions, peeled, halved
  • 18.20 gm extra virgin olive oil
  • 45g (1/4 cup, lightly packed) brown sugar
  • 40.00 ml balsamic vinegar
Instructions:
  • Preheat your oven to 190°C and line a large roasting pan with non-stick baking paper for easy cleanup.
  • In a large bowl, delicately coat the carrots and onion with oil. Spread them out evenly on the lined pan and roast in the oven for 20 minutes until they are tender.
  • Sprinkle sugar and vinegar over the vegetables, gently toss to coat, and roast for 25-30 minutes until tender and caramelised. Season with salt and pepper before serving.
