"Roasted carrots with balsamic vinegar bring out natural sweetness and tang, a delightful vegetarian side dish loved by all."
Ingredients:
  • 2 tablespoons butter, melted
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bag (2 lb) fresh carrots, peeled and quartered lengthwise
  • 2 tablespoons chopped fresh Italian (flat-leaf) parsley
Instructions:
  • Preheat the oven to 400°F and generously spray a 18x13-inch rimmed pan with cooking spray.
  • Combine melted butter, honey, 1 tablespoon of vinegar, salt, and pepper in a small bowl until well mixed. Add carrots to a pan and pour the butter mixture on top, then toss to evenly coat.
  • Roast uncovered for 15 minutes, then stir. Continue roasting for 13 to 18 more minutes until carrots are tender and browned. Drizzle with the remaining 1 tablespoon of vinegar, stir in the pan, and immediately remove the carrots. Sprinkle with fresh parsley before serving.
