Honey balsamic roasted carrots with a divine caramelized glaze - a simply delicious and easy dish.
Ingredients:
  • 1 pound carrots, peeled
  • 1 tablespoon olive oil
  • 1/4 teaspoon coarse salt
  • Freshly ground black pepper to taste
  • 1 1/2 tablespoons honey
  • 1 1/2 tablespoons balsamic vinegar
  • 1 teaspoon dried thyme
  • 1 teaspoon freshly squeezed lemon juice
  • 2 cloves garlic, pressed
  • chopped parsley to taste
Instructions:
  • Preheat the oven to 400°F (200°C) while lining a baking sheet with parchment paper.
  • Prepare carrots by trimming off the ends and cutting them into uniform pieces, either diagonally into thirds or lengthwise first for larger carrots before cutting diagonally. Aim for consistent sizes across all pieces.
  • In a small bowl, mix together olive oil, salt, and pepper. Spread carrots on a baking sheet and generously coat them with the olive oil mixture.
  • Roast in the oven until golden brown and tender, typically around 25-30 minutes.
  • In the same bowl with the oil, combine honey, balsamic vinegar, thyme, lemon juice, and garlic. Whisk together and set aside.
  • Take the carrots out of the oven, generously coat them with the honey balsamic mixture, then pop them back in the oven for 5 minutes. Any extra glaze can be drizzled over the carrots before serving.
  • Garnish with freshly chopped parsley and plate up.
