Irresistible gluten-free pumpkin spice Chex mix, customizable with nuts, seeds, and dried fruit for a delicious fall snack.
Ingredients:
  • 0.25 cup butter
  • 0.5 tablespoon ground cinnamon
  • 0.5 tablespoon brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1 pinch salt
  • 4 cups gluten-free crispy corn cereal squares (such as gluten-free Corn Chex®)
  • 1 cup peanuts
  • 0.5 cup pumpkin seeds
  • 1 cup milk chocolate chips
  • 1 cup raisins
Instructions:
  • Preheat your oven to a toasty 250 degrees F (120 degrees C) and line a big baking sheet with parchment paper.
  • In a microwave-safe bowl, place butter and cover with waxed paper. Microwave for 40 seconds until melted.
  • In a small bowl, blend together cinnamon, brown sugar, pumpkin pie spice, and salt. Stir in melted butter until well combined.
  • In a large bowl, mix cereal squares, peanuts, and pumpkin seeds. Pour in the butter-spice mixture and toss until everything is evenly coated. Spread the mixture on a baking sheet.
  • Bake in the preheated oven for 45 minutes, gently stirring every 15 to 20 minutes. Let it cool, then mix in milk chocolate chips and raisins. Transfer to a bowl and store in an airtight container.
