Decadent gluten-free flourless chocolate cake - rich, moist, and irresistibly delicious. Goodbye gluten, hello flavor!
Ingredients:
  • cooking spray
  • 3 cups gluten-free all purpose baking flour
  • 2 cups white sugar
  • 0.33333334326744 cup cocoa powder
  • 2.25 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1.5 teaspoons xanthan gum
  • 1.5 cups mayonnaise
  • 1.5 cups hot water
  • 1.5 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 350°F (175°C), then generously coat two 9-inch cake pans with cooking spray.
  • In a bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and xanthan gum. Add mayonnaise and stir until fully blended. Slowly pour in hot water and vanilla extract, stirring until the batter is smooth. Divide the batter into the cake pans.
  • Bake in the oven until a toothpick comes out clean and the cake pulls away from the sides, approximately 30 minutes. Allow to cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
