Indulge in rich chocolate cake made with protein-packed hazelnut meal for a satisfying treat in a small portion.
Ingredients:
  • 150g butter, cubed
  • 200g 70% dark chocolate, broken into pieces (see notes)
  • 140g (2/3 cup, firmly packed) brown sugar (see notes)
  • 5 eggs
  • 4.40 gm natural vanilla extract
  • 200g (2 cups) hazelnut meal
  • 2.00 gm gluten-free baking powder
  • 1/2 tsp maca root powder, to dust (optional)
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease the base of a 20cm springform pan and line it with baking paper.
  • Carefully melt the butter and chocolate together until smooth, either on the stovetop or in the microwave. Stir occasionally and then set aside.
  • In a large bowl, combine sugar, eggs, and vanilla by whisking until smooth. Introduce the melted chocolate mixture and whisk until fully incorporated. Gently fold in hazelnut meal and baking powder until just combined.
  • Pour the mixture into the pan and bake until just cooked (the cake will appear soft in the center), about 45 minutes. Allow it to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely. If desired, dust with maca powder before serving.
