Flourless chocolate hazelnut cake

Decadent flourless chocolate cake.
Ingredients:
  • 200g dark chocolate, chopped
  • 150g butter, chopped
  • 6 eggs, separated
  • 141.90 gm caster sugar
  • 150.00 gm hazelnut meal
  • double cream, to serve
  • 300g dark chocolate, chopped
  • 166.65 gm pure cream
Instructions:
  • Preheat the oven to 170°C/150°C fan-forced, then grease a 20cm (base) round cake pan that is 6cm deep and line both the base and side with baking paper.
  • In a small saucepan, melt the chocolate and butter over low heat, stirring until smooth. Let it cool slightly before using.
  • In a bowl, combine egg yolks and sugar, then use an electric mixer to beat until thick and creamy. Mix in the chocolate mixture, then blend in the hazelnut meal until well combined.
  • In a bowl, whip egg whites until soft peaks form using an electric mixer. Fold one-third of the egg whites into the chocolate mixture using a metal spoon, then gently fold in the rest of the egg whites.
  • Transfer the mixture into the prepared pan and bake for an hour or until a skewer inserted into the center comes out with moist crumbs sticking to it. Allow it to cool in the pan for 10 minutes, then carefully turn it out onto a wire rack to cool completely.
  • Create Chocolate icing by gently warming the chocolate and cream in a saucepan. Stir continuously for 3 to 4 minutes until silky. Spread over the cake's top and sides. Allow to sit for 10 minutes to set. Enjoy with a dollop of cream.
