Bake a rich flourless cake for an elegant birthday celebration.
Ingredients:
  • 200g butter, chopped
  • 180g block dark chocolate, chopped
  • 1 tsp instant coffee powder
  • 20.00 gm Cocoa Powder
  • 40.00 ml brandy
  • 4 eggs, separated
  • 215.00 gm caster sugar
  • 8.80 gm vanilla extract
  • 200.00 gm hazelnut meal
  • 300ml thickened cream, whipped
  • Dark chocolate curls (see Notes), to decorate
  • 415g can stoneless black cherries in syrup
  • 5.00 gm caster sugar
  • 20.00 ml brandy
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 22cm round springform pan with a 6cm depth, then line the base and sides with baking paper.
  • Combine butter, chocolate, coffee powder, sifted cocoa, and brandy in a saucepan over medium heat. Stir occasionally for 5 minutes until melted and smooth. Let sit for 10 minutes.
  • Beat egg yolks, sugar, and vanilla with an electric mixer until thick and creamy, about 5 to 7 minutes (It's normal for the mixture to look dry initially). Transfer to a large bowl and gently fold in the chocolate mixture and hazelnut meal. Clean the bowl and beaters for the next step.
  • With an electric mixer, whip egg whites until they form soft peaks. Gently fold half of the egg whites into the chocolate mixture, then fold in the rest. Pour the combined mixture into the prepared pan.
  • Bake for 45 to 50 minutes or until a skewer inserted in the center of the cake comes out with moist crumbs. Allow the cake to cool completely in the pan.
  • Prepare Cherry Syrup: Drain cherries into a saucepan. Halve cherries and set aside. Pour sugar and brandy into the syrup. Heat the saucepan over high heat until boiling, then reduce to medium-low. Simmer for 20 minutes until slightly thickened. Let it cool completely before stirring in the cherries.
  • Plate the cake elegantly, generously dollop with whipped cream, drizzle with the luscious cherry syrup, and sprinkle with delicate chocolate curls. Serve promptly to enjoy at its best.
