Chocolate hazelnut cake with fluffy frosting

Indulge in a decadent chocolate hazelnut cake with fluffy frosting for any festive occasion, young or old.
Ingredients:
  • 250g butter, chopped
  • 715.95 gm caster sugar
  • 832.50 gm cold water
  • 85.80 gm cocoa powder, sifted
  • 2.50 gm bicarbonate of soda, sifted
  • 399.00 gm self-raising flour, sifted
  • 250.00 ml plain flour, sifted
  • 150.00 gm hazelnut meal (ground hazelnuts)
  • 6 eggs
  • 375g butter, softened
  • 675.00 gm icing sugar mixture, sifted
  • 15.60 gm milk
  • White chocolate curls, to decorate
  • Dark chocolate curls, to decorate
Instructions:
  • Prepare two 22cm round cake pans by greasing and lining them with baking paper. In a large saucepan over medium-high heat, combine butter, sugar, 3 1/3 cups cold water, cocoa, and bicarbonate of soda. Stir for 5 minutes until smooth, then bring to a boil. Reduce heat to low and simmer for another 5 minutes, stirring occasionally. Allow the mixture to cool completely, then preheat your oven to 180°C/160°C fan-forced.
  • Transfer the chocolate mixture to a large bowl. Use an electric mixer to beat the chocolate mixture along with the flours, hazelnuts, and eggs for 5 minutes or until well combined and the mixture lightens in color.
  • Pour the mixture into the pans, making sure they are equally filled.
  • Bake for 1 hour 15 minutes, or until a toothpick inserted into the center of the cake comes out clean. If the cake is browning too quickly, loosely cover it with foil. Let the cakes cool in the pans for 15 minutes, then transfer them to a wire rack to cool completely.
  • With an electric mixer, whip butter until it becomes airy and fluffy. Slowly mix in icing sugar and cocoa, then incorporate milk and continue beating.
  • Trim the top of the first cake to make it level, then place it on a plate. Spread 1 cup of frosting on top of the first cake. Place the untrimmed cake on top. Spread the remaining frosting over the top and sides of the cake. Decorate the top with chocolate curls before serving.
