Gluten-Free Chocolate Crinkles

Gluten-free Bisquick™ mix makes delicious chocolate crinkle cookies coated in powdered sugar.
Ingredients:
  • 1/2 cup vegetable oil
  • 4 oz unsweetened baking chocolate, melted, cooled
  • 2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 4 eggs
  • 2 1/2 cups Bisquick™ Gluten Free pancake & baking mix
  • 1/2 cup gluten-free powdered sugar
Instructions:
  • Combine oil, chocolate, sugar, and vanilla in a large bowl. Add eggs one at a time, then mix in Bisquick until dough forms. Cover and refrigerate for at least 3 hours.
  • Preheat oven to 350°F. Grease cookie sheets with shortening or cooking spray. Roll teaspoonfuls of dough in powdered sugar, shaping into balls. Place balls 2 inches apart on cookie sheets.
  • Bake for 10 to 12 minutes until lightly touched in the center with almost no imprint remaining. Transfer to cooling racks right away.
