Enhance gluten-free zucchini waffles with rich dark cocoa for a delicious chocolate twist.
Ingredients:
  • 1.3333333730698 cups brown rice flour
  • 0.66666668653488 cup sorghum flour
  • 0.25 cup dark cocoa powder
  • 1 teaspoon ground cinnamon
  • 2 cups shredded zucchini
  • 1 cup soy milk
  • 2 eggs, beaten
  • 0.5 cup water
  • 0.25 cup vegetable oil
  • 0.25 cup honey
Instructions:
  • Preheat waffle iron as directed by the manufacturer.
  • Combine brown rice flour, sorghum flour, dark cocoa powder, baking powder, and cinnamon in a bowl, and mix well.
  • Combine shredded zucchini, soy milk, eggs, water, oil, and honey in a separate bowl, then mix in the flour mixture until evenly combined.
  • Grease the waffle iron with cooking spray. Pour 1 cup of batter into the iron, close the lid, and cook for 5 minutes until crisp and golden brown. Repeat with remaining batter, spraying the iron between each waffle.
