Gluten-Free Cinnamon Scones

Quick and easy gluten-free homemade scones with customizable variations in under an hour!
Ingredients:
  • 1 cup potato starch flour
  • 2/3 cup tapioca flour
  • 2/3 cup white rice flour
  • 6 tablespoons sugar
  • 4 teaspoons gluten free baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 eggs
  • 2/3 cup ghee (measured melted) or coconut oil
  • 1/4 cup almond milk, soymilk or regular milk
  • 1 teaspoon xanthan gum
  • 1 teaspoon guar gum
  • 1 teaspoon cinnamon
Instructions:
  • Preheat oven to 400°F and line a cookie sheet with a nonstick baking mat or parchment paper. If using parchment paper, lightly spray it with cooking spray (without flour).
  • Combine the flours, 6 tablespoons of sugar, baking powder, baking soda, 1 teaspoon of cinnamon, and salt in a medium bowl. In a separate small bowl, use an electric mixer on medium speed to blend eggs, ghee, milk, xanthan gum, and guar gum. Add the egg mixture to the dry ingredients and mix on low speed until well combined.
  • Grease work surface and hands with oil. Transfer dough to surface and shape into a 1-inch thick round. Cut dough into 8 wedges and arrange them 1 inch apart on a cookie sheet.
  • Mix the topping ingredients in a small bowl, then sprinkle it over the dough.
  • Bake for 14 to 18 minutes until firm. Transfer from baking sheet and enjoy while warm.
