Indulge in warm gluten-free cinnamon pear bread with butter.
Ingredients:
  • 375.00 ml coarsely grated William Bartlett pear (about 4 pears)
  • 60ml vegetable oil
  • 2 Free Range Eggs, lightly whisked
  • 125ml milk
  • 335g self-raising flour
  • 275g brown sugar
  • 120g almond meal
  • 5.00 gm ground cinnamon
  • 1 William Bartlett pear, extra, sliced thinly
  • Butter, to serve
Instructions:
  • Preheat oven to 160C. Grease and line a 20cm x 11.5cm loaf pan with baking paper, leaving extra paper hanging over the sides.
  • Combine the grated pear, oil, egg, and milk in a small bowl, stirring until fully mixed.
  • In a large bowl, combine flour, sugar, almond meal, and cinnamon, then make a well in the center. Pour in the pear mixture and stir until well combined. Transfer the mixture to the prepared pan, smooth the surface, and arrange sliced pears on top.
  • Bake for 1 1/4 hours or until a skewer comes out clean when inserted in the center. Allow to cool in the pan for 10 minutes before transferring to a serving plate. Slice and serve warm or toasted with butter.
