Gluten-free citrus shortbread

Indulge in this gluten-free treat that is moist and perfect for pairing with your favorite hot beverage for afternoon tea.
Ingredients:
  • 200 g butter softened, plus extra for greasing
  • 125 g icing sugar
  • ½ an orange
  • 1 small lemon
  • 1 lime
  • 350 g gluten-free flour
  • 1 teaspoon gluten-free baking powder
  • sugar to serve
Instructions:
  • 1. Preheat the oven to 190°C/375°F/gas 5. 2. Grease and line a flat baking tray with baking paper. 3. Beat butter, then grate in orange, lemon, and lime zests. 4. Cream butter, zests, and icing sugar until fluffy. 5. Fold in flour and baking powder, then gently form dough. 6. For rectangular shortbread, roll out to 1cm thickness and cut into fingers. For round biscuits, shape into 20 balls. 7. Prick the surface of each piece, then chill for 10-15 minutes. 8. Bake for 12-15 minutes until pale and crisp. 9. Cool for 5 minutes, then transfer to a rack and sprinkle with sugar. 10. Store in an airtight container for up to a week.
