Gluten-free cornbread with cream-style corn: sweet, moist, and easy to make.
Ingredients:
  • 1.25 cups white cornmeal
  • 0.25 cup gluten-free all-purpose flour
  • 1 tablespoon gluten-free baking powder
  • 1 cup milk
  • 0.25 cup butter, melted
  • 1 (14.75 ounce) can cream-style corn
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and generously grease an 8-inch square pan.
  • Combine cornmeal, sugar, flour, and baking powder in a bowl.
  • In a separate bowl, gently combine milk, butter, and egg with a whisk. Add this mixture to the cornmeal mixture, stirring just until combined with some lumps remaining. Gently fold in the corn. Transfer batter to the pan and smooth the top.
  • Bake until a toothpick inserted in the center comes out clean, about 20-25 minutes in the preheated oven.
