Gluten-free cornbread made with millet, cornmeal, and rice flour for a deliciously light and fluffy texture with a hint of crumble.
Ingredients:
  • 2 eggs, lightly beaten
  • 1.5 cups lukewarm water
  • 0.25 cup vegetable oil
  • 1.5 cups fine cornmeal
  • 1 cup millet flour
  • 1 cup rice flour
  • 0.25 cup white sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously grease a 9x9 inch baking pan.
  • Blend eggs, water, and vegetable oil until evenly mixed; set aside. Combine cornmeal, millet flour, rice flour, sugar, baking powder, and salt in a separate bowl, creating a well in the center. Pour in the liquid mixture and stir until just combined.
  • Transfer the batter into the pan and bake in the preheated oven until golden and the top springs back when lightly touched, approximately 20 minutes.
