Fluffy gluten-free, dairy-free pancakes - a delightful breakfast or dessert with fresh fruit.
Ingredients:
  • 1 cup self-rising gluten-free flour
  • 2 tablespoons white sugar
  • 1 pinch ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup lactose-free milk
  • 1 tablespoon coconut oil
Instructions:
  • Combine sifted flour, sugar, and ground cinnamon in a large bowl. Add eggs and vanilla extract, mix well. Gradually stir in milk until batter reaches desired consistency. To test, spoon some batter and observe it falling back into the bowl; it's ready when it takes about 4 seconds and coats the spoon lightly.
  • Allow mixture to rest for 15-20 minutes to blend flavors and thicken beautifully.
  • Heat the coconut oil in a skillet until melted over medium heat. Pour a portion of the batter into the skillet, swirling it around to create a thin, even circle. Place the skillet back on the heat source.
  • Cook pancake until bubbles begin to surface and edges appear dry, about 2 to 3 minutes. Flip using a spatula and cook the other side until lightly browned, around 2 minutes. Repeat with remaining batter.
